FRIED RICE OR JOLLOF RICE? LAGOSIANS CHOOSE

 Whether it's a shindig on Wednesday or it's the regular Owambe on Saturdays, Nigerians cannot seem to do without rice in any of these parties but it's ollof rice that gets all the praise and attention when it comes to the topic of rice in Nigerian cuisine especially on a world wide scale. Nigerian Fried Rice? Rarely given as much attention.

"In all the parties I have attended, I can count the ones where Fried rice was served", says Akpobome Joy, a nursing mother and mass communication student in the Nigerian Institute of Journalism.


Bolu Olaleye, a video mogul at Edge Plus Creative says, "Fried rice takes more time than jollof rice and I think that's why it's not given much attention in parties not because it's not sweet or people don't like it".

 However, this is a dish many have grown up on and are beginning to prefer, especially the Nigerian Fried Rice (specifically with Coleslaw or Nigerian Salad) to Jollof Rice; how the tables have turned; Fried rice signifies many things. Its a well known feature at key life events namely birthdays, weddings, naming ceremonies owing mainly to the amount of time required in chopping the vegetables that go in. For that reason, reserving it mainly for special occasions. While rice is a key staple across many cultures, the strong notes of curry powder and thyme amongst a medley of stir fried vegetables is the key feature of the dish.


WHAT IS A NIGERIAN FRIED RICE

Nigerian fried rice is a rice dish that’s made with meats, mixed veggies (carrots, peas, sweet corn, green beans) and spices. Like jollof rice, It is a common feature in parties. What makes this recipe authentic is the use of liver as the protein of choice.


WHAT ARE THE INGREDIENTS REQUIRED

1 lb beef liver (cleaned and washed; a key ingredient in authentic fried rice)

4 cups Parboiled long grain Rice like Basmati (washed and drained)

1 Large onion (chopped)

1 small habenero peppers

5 cups chicken stock

¼ - ½ teaspoon curry powder ( use ½ if you want more color)

1 teaspoon thyme

1½ Tablespoon Chicken bouillon powder (This will depend on how salty your meat stock is . Taste before adding more)

½ teaspoon Salt Adjust according to your taste

½ teaspoon White pepper

½ teaspoon rosemary

4 cups frozen mixed veggies thawed and drained

½ - ¾ cup cooking oil

1 medium Green bell pepper (chopped)

3 Stalks Spring onions (chopped)



Characterized for its greenish look and spicy taste, Fried Rice garners much love in the Asian part of the world as ir is the favourite food of the people in countries like Indonesia, India, even China, home to over 1 billion people. In addition to having tasty and tasty flavours, how to make it easy, taking into consideration the ingredients listed above and otther spices to produce delicious fried rice.
